Ingredients
- 2 cups of masa harina (corn flour)
- 4 cups of water
- 2 cups of milk
- 1 cup of piloncillo (Mexican raw sugar), or substitute with brown sugar
- 2 cinnamon sticks
- 1 tablespoon of vanilla extract
- A pinch of salt
- Whipped cream and ground cinnamon for garnish (optional)
Instructions
1. In a large saucepan, combine the water and the cinnamon sticks. Bring it to a boil over medium heat.
2. In a separate bowl, dissolve the masa harina in 1 cup of milk until there are no lumps.
3. Once the water is boiling, remove the cinnamon sticks and gradually add the masa harina mixture to the saucepan. Stir continuously to avoid any lumps.
4. Add the piloncillo or brown sugar, vanilla extract, and a pinch of salt to the saucepan. Stir until the sugar has completely dissolved.
5. Reduce the heat to low and let the champurrado simmer for about 15-20 minutes, stirring frequently to prevent it from sticking to the bottom of the pan.
6. Remove the saucepan from the heat and let it cool slightly before serving.
7. Pour the champurrado into mugs or traditional Mexican clay cups known as “jarritos.”
8. If desired, top each serving with a dollop of whipped cream and a sprinkle of ground cinnamon.
9. Serve your authentic Mexican champurrado hot and enjoy!
