Ingredients

For the pastry :

– 50g breadcrumbs

Method

1. To make the shortcrust pastry, sift the flour into a large bowl and add the chilled diced butter. Using your fingertips, work the butter into the flour until the mixture resembles breadcrumbs.

2. Beat the egg yolk with a little cold water and add to the bowl, combining everything together with a spatula until the mixture comes together as a dough. Add more water if necessary, but be careful not to add too much or the pastry will be too wet.

3. Once the dough is formed, wrap it in clingfilm and chill in the fridge for at least 30 minutes.

4. While the pastry is chilling, make the apple filling. Combine the grated apples, raisins, caster sugar, cinnamon and breadcrumbs in a large mixing bowl. Mix well until everything is evenly combined.

5. Preheat the oven to 200°C/gas mark 6.

6. Roll out the chilled pastry on a lightly floured surface to a thickness of around 3mm. Spoon the apple filling onto one side of the pastry, leaving a 2cm border around the edge.

7. Using a pastry brush, brush the border with the melted butter. Fold over the other side of the pastry to enclose the filling, pressing the edges together to seal.

8. Transfer the strudel to a baking sheet lined with baking parchment. Brush the top with the egg wash.

9. Bake the strudel in the preheated oven for 35-40 minutes, until the pastry is golden brown and crisp.

10. Remove the strudel from the oven and leave to cool for a few minutes. Dust with icing sugar, cut into slices and serve warm with a dollop of whipped cream or vanilla ice cream.
